When selecting mushrooms for a this type of recipe, one should choose the large portobello variety. Also avoid peeling them, as the skin is particularly flavorsome. Red Pepper and Spinach stuffed mushrooms (serves 4 people)
4 large Portobello's.
1/4 cup of red pepper, roughly chopped.
2 garlic cloves, crushed.
20oz of fresh spinach.
1/4 cup of grated or shaved Parmesan.
1/4 cup of French or Italian dressing.
- Scrape the inners from the mushroom caps using a sharp knife. Arrange them onto a foil lined baking tray and put to one side. Using a pastry brush, dab the dressing onto the sides of the caps. Heat the remainder of the dressing on a medium heat, adding the stems, pepper and garlic. Stir for approximately 2 minutes. Finally, add the spinach and cook until the spinach has wilted. Spoon the mixture evenly over the caps and then sprinkle with Parmesan. Place in the oven for 18 minutes at a temperature of 350 F, time.
Cheese And Bacon stuffed mushrooms (serves 4 people)
4 large Portobello's
1oz of Brie or Parmesan.
4 rashers of bacon, chopped after cooking.
1 tablespoon of chives, chopped.
Pinch of salt
Pinch of black pepper
Pinch of smoked paprika
Tablespoon of olive oil.
- Fry or grill the bacon, depending on preference and leave to cool. Using a nonstick pan, add the olive oil, stems, thyme, salt, pepper and smoked paprika. Fry gently for approximately 2 minutes. Add the chopped bacon to the mixture. Place the caps onto a baking tray and spoon the mixture onto the them. Top with the cheese. Place in the oven for 18 to 20 minutes at a temperature of 350 F.
