Simple chocolate fudge
Three cups of sugar
One cup of evaporated milk
Four teaspoons of cocoa powder
Two teaspoons of vanilla

  • Put the sugar, milk and cocoa in a three-quart saucepan and bring to a hard boil. Reduce the heat to medium and keep cooking until it gets the soft ball point at around 114 degrees Celcius. Then add the two teaspoons of vanilla until it's well blended. Pour this mixture into a baking dish (8 x 8 inch) that has been buttered. Allow to cool before cutting into pieces. You can also swap the vanilla for a quarter cup of creamy peanut butter.

Adding marshmallows and walnuts
Half a cup of butter
A cup of chocolate chips
A teaspoon of vanilla
Two cups of sugar
A can of evaporated milk
Marshmallows
A cup of chopped walnuts

  • In a mixing bowl put the chocolate chips, vanilla and butter. Place this to one side for the moment. Put the sugar, marshmallows and evaporated milk in a medium saucepan at a medium temperature. Stir regularly and bring to a boil. Then cook for an additional six minutes at a low heat. Take the saucepan off the heat and pour into the mixing bowl. Beat this mixture until it thickens and has no gloss. Throw in the walnuts and pour into an 8 x 8 baking dish. Place into the fridge for a few hours until firm.
