Tiramisu literally means 'pick me up' and is a great name for a truly fantastic and popular Italian desert. Tiramisu is traditionally made with lady's fingers dipped in coffee and is layered with a whipped mixture of egg yolks and mascarpone, flavored with liquor and cocoa. This recipe has been adopted all over the world and for those of us who don't want alcohol in our deserts luckily there is an alternative.
Making the lady's fingers
To make a truly homemade tiramisu you need to make your own lady's fingers.
When making lady's fingers you will need:
3 tablespoons of butter,
1 1/4 cup of stiffened flour,
6 egg yolks, 3/4 cup of sugar,
6 egg whites beaten until stiff,
A pinch of salt,
And 1 1/2 teaspoons of vanilla
Preheat the oven to 350 degrees Fahrenheit and grease and flour 3 baking sheets with the butter and coat with 3 tablespoons of flour. Put egg yolks, vanilla, and sugar in a large mixing bowl, and with an electric mixer beat on a medium high speed until the mixture has trebled in thickness and turned pale yellow. Add the egg whites, flour and salt into the yolk mixture and fold until smooth. Pour into a pastry bag and pipe fingers about 4 inches in length. Bake for 15 to 18 minutes.
Making the homemade tiramisu:
You will need the following ingredients to make your home made tiramisu:
1 1/4 cups of heavy cream,
1 cup of sugar,
16 ounces of yoghurt cheese,
14 ounces of lady's fingers,
1 cup of strong coffee,
And 1 teaspoon of cocoa powder
In a chilled bowl combine 3/4 cup of heavy cream with 2 tablespoons of sugar to taste. Whip with an electric mixer until soft peaks form. Cover and refrigerate until ready to use. In a large bowl combine the yoghurt cheese, 1/2 cup of heavy cream, vanilla, and the remaining sugar. Whisk until light and fluffy, quickly dip the lady's fingers into coffee and line the bottom of a 9 by 9 pan with them. Put half of the yoghurt cheese mixture over the lady finger layer and spread until even. Make another layer of lady's fingers and again cover with the rest of the yoghurt cheese mixture. Top with a final layer of lady's fingers and coat with whipped cream. Dust the top with cocoa and chill for an hour before serving your homemade tiramisu.
