Easy Mexican Inspired Recipes

Mexican food is a style of food that originated in, not surprisingly, Mexico and is known for its variety of spices, ingredients and flavors.

 

Traditional Mexican food includes quesadillas, enchiladas, and tacos. Mexicans enjoy using fresh produce to make these dishes and they are rightfully proud of such a delicious cuisine. A lot of people have never tried making Mexican food at home before, but it is well worth trying because a lot of Mexican recipes are very simple and the ingredients are easy to find.

Mango Salsa Recipe
This fresh mango salsa recipe contains a mixture of fruit, vegetables and lime juice.

1 mango, peeled and diced
1 red pepper, roasted, peeled and diced
1 tbsp olive oil
1/4 cup fresh cilantro, chopped
1/2 orange, peeled and diced
1 canned pineapple ring, chopped
1 tsp jalapeno pepper, chopped
1/4 cup green onions, chopped
Juice of 1 lime
Salt and black pepper, according to taste

Combine all the ingredients well, adjusting the seasoning to taste.

Chicken is a common ingredient in traditional Mexican food. In this Mexican inspired recipe, tomato, bell pepper, and corn are used, as well as lime juice and other ingredients

4 skinless, boneless chicken breast halves
1 1/2 cup mango salsa
3 tbsp finely chopped scallion
2 tbsp chopped fresh cilantro
2/3 cup frozen corn kernels, defrosted
2 tbsp salt-free tomato paste
2 tbsp fresh lime juice
1 green bell pepper, cut into thin strips

Prepare the grill or preheat the broiler. Combine 1/2 cup of the mango salsa with the tomato paste. Add the chicken and stir to coat. Combine the rest of the salsa with the corn, scallion, bell pepper, cilantro and lime juice in another bowl. Grill or broil the chicken for about 4 minutes per side, 4 inches away from the heat until it is cooked through. Serve it with the mango salsa on the side.

Mexican Cajeta (Mexican Caramel Candy)

3 cup sugar
6 cups cow's milk
1/2 tsp baking soda
6 cup goat's milk
1 stick cinnamon
2 tsp cornstarch

Dissolve the soda and cornstarch in 2 cups of the cow's milk. Heat the rest of the milk in a saucepan and bring it to a boil. Add the soda and cornstarch mixture to the milk. Add the cinnamon stick and sugar and keep cooking, stirring it often with a wooden spoon. Cook for an hour and keep stirring it until the mixture is thick.
